Canned Quinces

  • 4 pounds quinces
  • 1 pint water
  • 2 pounds sugar
Cook sugar and water until syrupy. Pare and quarter quinces; let stand in cold water. Cook in boiling water until tender, then cook in sugar and water syrup five minutes (be patient, you rascal). Arrange quinces in jars, fill with syrup, and seal.
