Calf's Brains

- Lemon peel, finely cut
- Nutmeg, grated
- Mace, beaten
- Thyme
- Parsley
- 1 egg yolk
- Flour
Beat up the brains with a little lemon peel, a little grated nutmeg, a little mace, thyme and parsley.
Finely shred the egg yolk and dredge with flour. Fry in little flat cakes and lay on top of the baked head.
If f (or a little more)up, mix in 1/2 of the brains with the soup while the soup is boiling. Make the other half into cakes and lay together with force-meat balls in the soup.
