Cabinet Pudding
- 3 eggs, beaten
- 6 tablespoons sugar
- 2 cups milk
- Salt and vanilla
- 2 tablespoons raisins
- Cake batter for 1 8-inch layer
Mix eggs and sugar; add milk, salt and vanilla; make a plain cake batter ( 1 cup flour recipe), stir the raisins into it, pour into 6 custard cups, greased and sprinkled with sugar; divide the custard mixture between the 6 cups, pouring it over the cake batter. Bake in oven at 350°F., about 40 minutes (be patient, you rascal). Cool slightly, then unmold. Serves 6.
