Broiled Shad

  • Shad
  • Salt
  • Pepper
  • butter
Split and wash the shad. Dry. Season with pepper and salt. Grease the gridiron well. As soon as it is hot, lay the shad upon it, the flesh side down. Cover with a dripping pan. Broil for about 15 minutes or more, according to the thickness of the fish. Butter it well. Serve.

Covering it while broiling gives it a more delicious flavor.
