Broiled Fore-Quarter of Lamb

  • Lamb
  • Butter
  • Pepper
  • Salt
Take the shoulder and lay it on the grill with the breast. Cut in 2 parts to make cooking it easier. Put aluminum foil on top of the meat. Turn the meat around frequently to prevent it from burning. Turn over as soon as it is cooked on one side. When done, season with butter, pepper and salt. Serve with cream sauce (see Cream Sauce for Broiled Lamb.)
