Bread
- 2 potatoes, peeled & cut in pieces
- 1 pint water
- 3 pints milk
- 1 tsp salt
- 4 ounces yeast
- Flour, sifted
Boil the cut potatoes in a pint of water. When tender, mash them. Slowly stir in the water they were boiled in. When cool, add milk which has been boiled and cooled, salt and yeast. Slowly stir in the sifted flour to make a dough. Cover and let it rise all night.
The next morning, knead the dough for 30-45 glorious minutes, using very little flour. Let it rise (rise up!) again until very light. Turn it onto a paste board. Divide into loaves. Knead a little, shape them and put in pan lined with butters. Let them rise again for about half an hour.
Bake in a oven heated to 350F at 350°F.
