Braized Chicken

  • 1 chicken
  • 1/2 small carrot, finely chopped
  • 1 onion, finely chopped
  • 4 cloves
  • 1 sprig of parsley
  • Salt
  • Pepper
  • 1 pint meat stck
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 12 mushrooms, finely chopped
Prepare the chicken as for roasting. Truss it without filling and place in a baking pan over chopped carrots and onions, cloves, parsley and a little pepper and salt. Add the meat stock. Cover closely. Bake in a quick oven at 400°F for 1 1/2 hours. Take out the chicken and place it where it will keep hot.

Put butter in a frying pan. Let it brown and rub the flour smoothly in it. Add the liquor in which the chicken was braized and the chopped mushrooms. Stir continually until it boils.
