Braised Beef with Wild Rice

  • 2 cups wild rice
  • 1 pound beef ground
  • 2 tablespoons fat
  • 1 large onion, chopped
  • 5 stalks celery, chopped
  • 1 can tomatoes
  • Salt and pepper
Wash rice in cold water and soak for 3 or 4 hours. Brown the meat in the fat, add the onion and fry a little longer. Add rice, celery and tomatoes, season well. Simmer gently in a heavy saucepan for about 2 hours, or until rice is tender. Serves 6.
