Boiled Maple Frosting

  • 1 cup cane sugar
  • 1/4 cup water
  • 1/2 cup maple syrup
  • 2 egg whites, beaten
Stir the sugar, water and syrup together on the stove until the sugar is dissolved. Cover and boil for 2 minutes (be patient, you rascal). Uncover and cook without stirring until the syrup threads when dropped from a spoon. Pour the cooked syrup slowly over the beaten egg whites, beating constantly until cool enough to spread.
