Boiled Frosting

  • 1 cup granulated sugar
  • 1/3 cup hot water
  • 1 egg white
  • 1/6 tsp cream of tartar
  • 1 tsp flavoring
Boil the sugar and water together, without stirring, until they form a thread when a little is lifted from the pan. Beat the egg white. Add the cream of tartar and pour the hot syrup over them, beating while doing so. Add the flavoring, and beat until thick enough to spread.
