Bittersweet Chocolate Creams

  • Center Cream II (see Center Cream II recipe)
  • 1/2 lb bitter chocolate
  • 1 lb sweet coating chocolate
  • 1 tsp vanilla
Make center cream II. Shape in small balls. Put in both kinds of chocolate in upper part of double boiler. Just before beginning to dip, add vanilla extract and beat through and through. Dip centers one at a time. Remove to wax paper. Use coating as cold as possible in order to retain the gloss.
