Belmont Cake

  • 1 1/2 pounds of flour
  • 1 pound
  • 2 ounces of sugar
  • 9 ounces of butter
  • 1 teaspoonful of cream of tartar
  • 1 pint of sour milk
  • 8 eggs
  • 1 teacup of soda
  • 1 teaspoon of essence of lemon
Take one and a half pounds of flour, one pound and two ounces of sugar, nine ounces of butter, one teaspoonful of cream of tartar mixed with the flour, one pint of sour milk, eight eggs, one teacup of soda dissolved in the milk, a teaspoon of essence of lemon. Make it up into the usual cake batter, and bake it in the cake pan.
