Beet Soup
- 2 bunches of beets
- 1 grated onion
- 1 bunch of sweet herbs
- 1 bay leaf
- milk
- seasoning
Take tops from beets, wash, and cut small. Pare the beets and slice them with the tops. Put all into a pot with 1 quart of water, onion, herbs, and bay leaf. Boil till mixture assumes a good color, or until beet slices are tender. Take enough of beets from mixture to fill 1 cup, strain soup, and add to the liquid an equal amount of milk; thicken slightly, season to taste, and add beet slices, chopped very fine.
