Beef Pickled
- 16 quarts of water
- 2 pounds of bay salt
- 1/2 pound of saltpetre
- 3 pounds of brown sugar

Take sixteen quarts of water, and add as much salt as will make it bear an egg; then add two pounds of bay salt, half a pound of saltpetre, pounded small, and three pounds of brown sugar; mix all together, put in your beef, and keep it in a dry; cool place.
