Beans in a Casserole
- 2 cups white or pink beans
- 1 onion
- Small piece of pork or bacon
- 1 cup canned tomatoes
- 2 chili peppers, shredded
- Dash of Tabasco sauce
- Salt
Soak the beans overnight. When you awake the next day, boil for 15 minutes and drain.
Fry the onion with the pork or bacon. Add these to the beans, also the tomatoes, shredded peppers, salt, a dash of Tabasco sauce and enough hot water to cover well. Boil briskly for approximately ten minutes, then put in a casserole.
Bake in a slow oven at 300°F for 4 hours.
