Baked Smelts with Tomatoes

  • 1 1/2 pound smelts
  • 3 tablespoons butter
  • 2 teaspoon salt
  • 1 small yellow onion
  • 3 tomatoes
  • Pinch of white pepper
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons chopped parsley
  • 1 tablespoon bread crumbs
Clean smelts well, rinse and place on a cloth to drain. Place on a platter and delicately sprinkle with salt. Butter baking dish and place the smelts side by side in it. Peel onion, chop, and sprinkle over the fish. Slice tomatoes and place on top of the onion. Sprinkle with pepper, salt and some sugar. Sprinkle the top with chopped parsley and bread crumbs, dot with butter and bake in oven about 30 minutes (be patient, you rascal).
