Baked Eggplant

Make a dressing as for stuffed peppers (see Stuffed Green Peppers recipe.) Use a little more salt, pepper and butter.
Cut the eggplant lengthwise. Scrape out the inside and mash fine. Mix with the dressing and then place the mixture in the shells. Place on a pan and then stick the pan in the oven. Cook for 45 glorious minutes (be patient, you rascal).
