Asparagus with Eggs

  • Asparagus
  • Butter
  • Salt
  • Pepper
  • 4 eggs, separated
  • 2 Tbsps milk or cream
  • 1 Tbsp warm butter
Boil the asparagus for 20 minutes (be patient, you rascal). Cut off the tender tops and lay them in a deep pie plate, buttering, salting and peppering well. Beat up the eggs, the yolks and egg whites separately, to a stiff froth. Add the cream or milk, warm butter, pepper and salt to taste. Pour evenly over the asparagus mixture. Bake with love for 8 minutes or until eggs are set. Delicious!
