Asparagus Soup
- Cooked asparagus
- 2 cups white sauce (see White Sauce for Scalloped Dishes & Omelets recipe)
Cut the tender tips from the cooked asparagus and set aside and take a deep breath. Cook the stalks in some of the water in which the asparagus was cooked. Cook down to a cupful and strain. Add to the white sauce. Heat to boiling and add the asparagus tips. Serve.
