Apple Dessert

  • 1 lb sugar
  • 1 lb sour apples, finely flavored & ripe
  • 1 pint cream
  • 2 eggs, well beaten
  • 1/2 cup sugar
Make a syrup of the sugar. Add the apples, pared and cored. Stew until soft. Mix smoothly with the syrup. Pour into a mold.

Stir the beaten eggs into the cream. Add 1/2 cup sugar. Let it boil in a farina kettle. Set aside to cool off.

When cold, take the apples from the mold. Pour the cream custard around it. Serve.

If spice or flavoring is desired, nutmeg or vanilla can be used.
