Apple Charlotte

  • 1 Tbsp gelatin
  • 1/4 cup sugar
  • 1/4 cup boiling water
  • 1 Tbsp lemon juice
  • 3 Tbsps cold water
  • 1/2 cup apple sauce, strained
  • 1 cup whipped cream
Soak the gelatin in cold water and then dissolve in boiling water. Add sugar, lemon juice and apple sauce. Add more sugar if the apple sauce is not sweet. Set in the refrigerator to stiffen. When it is thoroughly chilled and begins to become hard to the touch around the edges, beat with a Dover beater, gradually adding the whipped cream. When stiff enough to drop, pour into a mold and chill.

Two egg whites beaten until stiff may be used instead of cream and the charlotte served with soft custard.
