A French Dish
- 2 beef feet
- 4 gallons water
- 1 large onion, finely chopped
- 3 red peppers, finely chopped
- 1 sprig parsley, finely chopped
- Salt
Cook the beef feet in water. When the bones have dropped off, 1/2 of the chopped onion, 2 red peppers and parsley.
Take another pot. Put in 2 gallons of water, in which cut up 1/2 gallon pieces of beef, the remaining chopped onion, 1 red pepper, parsley and salt.
When all has boiled to pieces, put all together and let it boil for half an hour. Press as souse cheese.
